  • 1 pound ground beef
  • 2 tablespoons vegetable oil
  • 1 small onion (finely chopped)
  • 2-3 cloves garlic (minced)
  • 1 cup bell peppers (sliced)
  • ½ cup carrots (sliced thin)
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • ¼ teaspoon red pepper flakes (optional)
  • Green onions (sliced, for garnish)

Instructions

  • Cook the Noodles: Boil your noodles according to package instructions. Drain and rinse under cold water. Set aside.
  • Prepare the Beef: In a large skillet over medium-high heat, heat the vegetable oil. Add the ground beef, breaking it apart with a spatula, and cook until browned (about 5-7 minutes). Drain excess fat if needed.
  • Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.
  • Add Vegetables: Stir in the sliced bell peppers and carrots, cooking for an additional 3-4 minutes until tender-crisp.
  • Make the Sauce: In a small bowl, mix the soy sauce, brown sugar, and red pepper flakes. Pour the sauce over the beef and vegetables, stirring to combine.
  • Combine with Noodles: Add the cooked noodles to the skillet and toss everything together until well mixed. Cook for another 2-3 minutes to heat through.
  • Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve hot.

  • For added crunch, toss in some toasted sesame seeds or chopped peanuts before serving.
