Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter or cooking spray.
  • Melt the Chocolate and Butter: In a microwave-safe bowl or double boiler, combine the 1/2 cup of butter and 1 cup of chocolate chips. Heat until melted and smooth, stirring frequently.
  • Whisk the Eggs: In a separate bowl, whisk together the 2 eggs, 2 egg yolks, and 1/4 cup of sugar until thick and pale. Stir in the 1 teaspoon of vanilla extract and a pinch of salt.
  • Combine Ingredients: Gradually mix the melted chocolate into the egg mixture, stirring until well combined. Gently fold in the 2 tablespoons of flour until just incorporated.
  • Fill the Ramekins: Divide the batter evenly among the prepared ramekins.
  • Bake: Place the ramekins on a baking sheet and bake for 12 minutes, or until the edges are firm but the center still jiggles slightly.
  • Cool and Serve: Let the cakes cool for 1 minute, then invert onto plates. Serve immediately, preferably with ice cream or whipped cream.

Notes

  • Timing is Key: Be careful not to overbake; the perfect lava cake should have a molten center.
  • Serving Suggestions: Try pairing with fresh berries or a drizzle of chocolate sauce for an extra indulgent touch.
