- 2 cups strawberries (hulled and sliced)
- 1 cup blueberries
- 1 cup raspberries
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare the Pie Crust: In a bowl, mix flour, salt, and sugar. Cut in the butter until crumbly. Add ice water until the dough holds together. Divide, wrap, and chill for 1 hour.
- Make the Filling: In another bowl, combine strawberries, blueberries, and raspberries. Add sugar, cornstarch, lemon juice, vanilla, and salt. Let sit for 15 minutes to release juices.
- Assemble the Pie: Preheat the oven to 425°F (220°C). Roll out one dough disc into a 9-inch pie dish. Add the berry filling. Roll out the second dough and cover the filling, sealing the edges.
- Bake: Place on a baking sheet and bake for 15 minutes. Reduce temperature to 350°F (175°C) and bake for another 30-35 minutes until golden.
- Cool and Serve: Let the pie cool for at least 2 hours before slicing to allow the filling to set.
