For the Pie Crust:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter (cold, cubed)
  • 6-8 tablespoons ice water

For the Filling:

  • 2 cups strawberries (hulled and sliced)
  • 1 cup blueberries
  • 1 cup raspberries
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Prepare the Pie Crust: In a bowl, mix flour, salt, and sugar. Cut in the butter until crumbly. Add ice water until the dough holds together. Divide, wrap, and chill for 1 hour.
  • Make the Filling: In another bowl, combine strawberries, blueberries, and raspberries. Add sugar, cornstarch, lemon juice, vanilla, and salt. Let sit for 15 minutes to release juices.
  • Assemble the Pie: Preheat the oven to 425°F (220°C). Roll out one dough disc into a 9-inch pie dish. Add the berry filling. Roll out the second dough and cover the filling, sealing the edges.
  • Bake: Place on a baking sheet and bake for 15 minutes. Reduce temperature to 350°F (175°C) and bake for another 30-35 minutes until golden.
  • Cool and Serve: Let the pie cool for at least 2 hours before slicing to allow the filling to set.

Notes

  • For extra flavor, consider adding a splash of almond extract to the filling.
  • Mini pies can be made using a muffin tin for individual servings.
