Mint Chocolate Poke Cake 🍫🌿

This decadent mint chocolate poke cake combines rich chocolate cake with a refreshing minty filling, topped with a smooth whipped topping and chocolate drizzle. Perfect for mint-chocolate lovers and any occasion where you want a delightful and visually stunning dessert!

Ingredients:

For the Cake:

  • 1 box chocolate cake mix (and ingredients required to prepare it, usually eggs, water, oil)
  • 1/4 teaspoon peppermint extract

For the Mint Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 1/4 cup heavy cream
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)

For the Topping:

  • 2 cups whipped topping (or homemade whipped cream)
  • 1/2 cup mini chocolate chips
  • 1/4 cup chocolate syrup or melted chocolate for drizzling

Instructions

  1. Prepare the Chocolate Cake:
    • Preheat your oven to the temperature specified on the cake mix box (usually around 350Β°F/175Β°C).
    • Grease and flour a 9x13-inch baking pan.
    • Follow the instructions on the cake mix box to prepare the chocolate cake batter. Stir in 1/4 teaspoon of peppermint extract for a subtle mint flavor.
    • Bake the cake according to the box instructions. Once baked, remove from the oven and let it cool for 10 minutes.
  2. Poke the Cake:
    • Using the handle of a wooden spoon or a skewer, poke holes all over the cake, spacing them evenly about 1 inch apart.
  3. Make the Mint Filling:
    • In a bowl, whisk together the sweetened condensed milk, heavy cream, peppermint extract, and a few drops of green food coloring (if you want a festive green mint layer).
    • Pour the mint mixture over the entire cake, making sure it seeps into the holes. Refrigerate the cake for at least 1 hour to allow the mint filling to absorb and the cake to cool completely.
  4. Top the Cake:
    • Once the cake is completely cooled, spread a generous layer of whipped topping evenly over the top.
    • Sprinkle the mini chocolate chips over the whipped topping for a crunchy texture.
  5. Drizzle and Serve:
    • Drizzle the chocolate syrup or melted chocolate over the cake in a zig-zag pattern for a decorative finish.
    • Slice the cake into squares and serve chilled for the best flavor!

Notes

  • You can add more or less peppermint extract based on your flavor preference.
  • For extra mintiness, add crushed mint candies or Andes mint pieces on top as garnish.
  • If you love chocolate, consider using chocolate whipped topping for an even richer flavor.
