For the Tart Shells:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1-2 tablespoons cold water

For the Pastry Cream:

  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

For the Toppings:

  • Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, raspberries)
  • Optional: Apricot jam (for glazing)

Instructions

  • Prepare the Tart Shells:
    • In a bowl, mix flour, powdered sugar, and salt. Add the cold butter and use a pastry cutter or your fingers to combine until crumbly.
    • Add cold water, one tablespoon at a time, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  • Roll and Bake the Dough:
    • Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut out circles to fit mini tart pans.
    • Press the dough into the pans and prick the bottoms with a fork. Bake for 12-15 minutes or until lightly golden. Let cool.
  • Make the Pastry Cream:
    • In a saucepan, heat milk until steaming. In a bowl, whisk together sugar, egg yolks, and cornstarch until smooth. Slowly add hot milk while whisking.
    • Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened. Remove from heat and stir in vanilla and butter. Cool to room temperature.
  • Assemble the Tarts:
    • Fill each cooled tart shell with pastry cream and top with fresh fruits. For extra shine, warm apricot jam and brush over the fruits.

Notes

  • You can prepare the tart shells and pastry cream ahead of time, assembling the tarts just before serving for optimal freshness.
