Ingredients

For the vanilla buttercream

  • 1 cup (226 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 2 tbsp whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time along with vanilla extract; mix until fully incorporated.
  5. Gradually combine dry ingredients with the wet mixture while alternating with milk until smooth.
  6. Fill cupcake liners two-thirds full with batter and bake for about 20 minutes or until a toothpick comes out clean.
  7. Allow to cool completely before frosting as desired.
  8. Make the vanilla buttercream: beat the softened butter for 3 to 4 minutes until pale and fluffy. Add the sifted powdered sugar a cup at a time on low speed, then the milk and vanilla. Beat 2 minutes more, until light and spreadable. Frost only once the bake has cooled completely.

Notes

For added flavor, consider mixing in chocolate chips or lemon zest into the batter.

To make them gluten-free, substitute regular flour with a gluten-free blend.
