Description

This Mediterranean Salmon Bowl is a vibrant, healthy meal packed with grilled salmon, fresh veggies, quinoa, and a tangy tzatziki sauce. It's perfect for lunch, dinner, or meal prep!


Ingredients

    • 2 salmon fillets (about 6 oz each)
    • 1 tbsp olive oil
    • 1 tsp dried oregano
    • 1 tsp garlic powder
    • Salt and pepper to taste
  • For the bowl:
    • 1 cup cooked quinoa (or couscous)
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1 avocado, sliced
    • 1/4 red onion, thinly sliced
    • Fresh parsley, chopped for garnish
  • For the tzatziki sauce:
    • 1/2 cup Greek yogurt
    • 1 tbsp lemon juice
    • 1 tsp dill
    • 1 garlic clove, minced
    • Salt and pepper to taste

Instructions

  • Prepare the salmon:
    Preheat your grill or a grill pan over medium-high heat. Drizzle olive oil over the salmon fillets and sprinkle with oregano, garlic powder, salt, and pepper. Grill for 4-5 minutes on each side, or until the salmon reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.
  • Make the tzatziki sauce:
    In a small bowl, combine Greek yogurt, lemon juice, dill, garlic, salt, and pepper. Stir until smooth and well combined.
  • Assemble the bowl:
    In a bowl, layer the cooked quinoa, cherry tomatoes, cucumber, avocado, and red onion. Place the grilled salmon on top. Drizzle with tzatziki sauce and garnish with fresh parsley.
  • Serve:
