Ingredients
- Chicken: 2 boneless, skinless chicken breasts (1 lb)
- Vegetables: 1 medium onion, 3 cloves garlic, 2 carrots, 2 celery stalks, 1 cup spinach, 1 cup corn
- Broth: 6 cups low-sodium chicken broth, 1 cup water
- Herbs: 2 tsp dried thyme, 1 tsp dried oregano, 1 bay leaf, salt and pepper to taste
- Cream: 1 cup heavy cream (or coconut milk)
- Garnish: Fresh parsley, crusty bread
Instructions
- Prep: Chop the onion, garlic, carrots, and celery. Cut chicken into bite-sized pieces.
- Sauté: Heat 2 tbsp olive oil in a large pot. Sauté onions until translucent, then add garlic and cook for 1 minute.
- Cook Chicken: Add chicken pieces, season with salt, pepper, and half of the thyme. Cook until browned.
- Add Veggies: Stir in carrots, celery, corn, broth, water, bay leaf, and remaining thyme. Bring to a boil, then simmer for 20-25 minutes.
- Finish: Add spinach and cream. Simmer for another 5 minutes. Shred chicken if using raw, then return to the pot. Adjust seasoning.
- Serve: Ladle into bowls, garnish with parsley, and enjoy with crusty bread!
