Scale
For the Dough:
- 3 ½ cups all-purpose flour
- 1 packet (2 ¼ tsp) active dry yeast
- ½ cup whole milk, warmed
- ¼ cup granulated sugar
- ½ tsp salt
- 2 large eggs
- ½ cup unsalted butter, softened
For the Filling:
- 1 cup pecans, chopped
- ½ cup brown sugar
- 2 tsp cinnamon
- ½ cup maple syrup
For the Caramel Topping:
- ½ cup maple syrup
- ¼ cup unsalted butter
- ½ cup brown sugar
Instructions
- Make the Dough:
- In a bowl, mix warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture, eggs, and butter. Knead until smooth.
- Place in a greased bowl, cover, and let rise for 1-2 hours until doubled.
- Prepare the Filling:
- Mix chopped pecans, brown sugar, and cinnamon in a bowl. Set aside.
- Shape the Babka:
- Roll out the dough on a floured surface into a rectangle (about 12x18 inches). Spread maple syrup evenly over the dough, then sprinkle the filling mixture.
- Roll tightly from the long side and slice the roll in half lengthwise. Twist the two halves together and place in a greased loaf pan.
- Make the Caramel:
- In a saucepan, melt butter, maple syrup, and brown sugar. Cook until bubbly, then pour over the twisted dough.
- Bake:
- Preheat the oven to 350°F (175°C). Bake for 30-35 minutes until golden brown. Allow to cool before serving.
Notes
- For added flavor, consider toasting the pecans before adding them to the filling.
- Allow the babka to cool completely in the pan for easier slicing.
