  • 8 oz spaghetti or penne
  • 4 ripe Roma tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.
  3. Add chopped tomatoes, salt, pepper, and red pepper flakes. Simmer for 10-15 minutes until sauce thickens.
  4. Toss the cooked pasta into the sauce along with chopped basil until well coated.
  5. Remove from heat and sprinkle with grated Parmesan before serving.
