A delicious twist on classic meatloaf, this casserole combines savory ground beef with creamy mac and cheese in one satisfying dish. The perfect comfort food, great for dinner or meal prep!

- 1 lb ground beef (80/20)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1/4 cup chopped onion
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 2 cups elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 1/2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese (optional)
- 1/2 cup shredded cheddar (for topping)
- 1/4 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Prepare the meatloaf: In a bowl, mix ground beef, breadcrumbs, milk, egg, onion, garlic powder, onion powder, oregano, salt, pepper, ketchup, and Worcestershire sauce. Form into a meatloaf and press into the prepared baking dish.
- Cook the macaroni: Boil the elbow macaroni in salted water until al dente, drain, and set aside.
- Make the cheese sauce: In a pot, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes. Gradually add 1 1/2 cups milk, whisking constantly until thickened. Stir in cheddar, mozzarella, and Parmesan (if using). Add salt and pepper to taste.
- Assemble the casserole: Pour the cheese sauce over the cooked macaroni, then spread the macaroni mixture on top of the meatloaf in the baking dish.
- Top with cheese and breadcrumbs: Sprinkle shredded cheddar cheese and breadcrumbs (if using) over the casserole.
- Bake: Bake for 20-25 minutes until the top is golden and bubbly. Let rest for 5 minutes before serving.
Notes
- For added flavor, stir some sautéed mushrooms or spinach into the meatloaf mixture.
- Use any pasta shape you prefer – penne or rotini works great too.
- This casserole can be made ahead and stored in the fridge for up to 3 days or frozen for later.
