- Prepare the Oven and Pan:
- Preheat the oven to 175°C (350°F). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
- Make the Bread Batter:
- In a large bowl, cream together the softened butter, sugar, and cream cheese until light and fluffy.
- Beat in the eggs one at a time, then mix in the lemon juice and lemon zest.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Bake:
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the Glaze (optional):
- While the bread is baking, mix the powdered sugar and lemon juice in a small bowl until smooth.
- Drizzle over the cooled bread for extra lemony sweetness.
- Cool and Serve:
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
