Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp fresh basil, finely chopped
  • ½ tsp vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  • Add the egg, lemon juice, lemon zest, basil, and vanilla extract to the butter mixture. Mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet about 2 inches apart.
  • Gently flatten each dough ball with the back of a spoon.
  • Bake for 8-10 minutes or until the edges are golden and the center is set.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter finish, drizzle the cooled cookies with a lemon glaze made from powdered sugar and lemon juice.
  • You can add extra lemon zest if you prefer a more intense lemon flavor.
  • For a more fragrant cookie, use fresh basil instead of dried basil.
  • If the dough is too soft to handle, refrigerate it for 30 minutes before baking to help prevent spreading.
