Ingredients
Scale
For the Cake:
- 1 cup rolled oats
- 1 1/4 cups boiling water
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
For the Topping:
- 1/2 cup unsalted butter
- 1 cup brown sugar, packed
- 1/4 cup milk
- 1 cup shredded coconut
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat and Prepare Oats:
- Preheat the oven to 350Β°F (175Β°C). Grease a 9x13-inch baking dish.
- In a medium bowl, combine the rolled oats and boiling water. Let sit for 10 minutes to soften.
- Mix the Cake Batter:
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Add the soaked oats to the butter mixture and mix well.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients, mixing until just combined.
- Bake the Cake:
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the Topping:
- While the cake is baking, prepare the topping. In a saucepan, melt the butter over medium heat. Stir in the brown sugar and milk, cooking until the mixture is smooth and slightly thickened, about 3 minutes.
- Remove from heat and stir in the shredded coconut and nuts, if using.
- Broil the Topping:
- Once the cake is done, remove it from the oven and switch the oven to broil.
- Spread the topping evenly over the hot cake.
- Place the cake under the broiler for 2-3 minutes, or until the topping is bubbly and caramelized. Watch closely to prevent burning.
- Cool and Serve:
- Let the cake cool slightly before serving. Enjoy warm or at room temperature.
Notes
- For added flavor, try adding a teaspoon of nutmeg or cardamom to the batter.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
