Instructions
- Prepare the crust:
Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar (if using). Press the mixture into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes, then remove from the oven and set aside to cool. - Make the filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the sour cream, powdered sugar, vanilla extract, and lemon juice, mixing until fully combined. Add eggs one at a time, beating well after each addition. - Bake the cheesecake:
Pour the cheesecake batter into the prepared crust. Smooth the top with a spatula. Bake for 45–50 minutes or until the center is just slightly wobbly. Let it cool in the oven with the door ajar for 1 hour, then transfer to the fridge to chill for at least 4 hours (overnight for best results). - Prepare the kiwi topping:
Once the cheesecake has chilled, arrange the kiwi slices on top in a decorative pattern. For extra shine, warm honey and water together in a small saucepan over low heat. Drizzle the honey glaze over the kiwi slices. - Serve:
Remove the cheesecake from the springform pan and transfer it to a serving plate. Slice, serve, and enjoy!
