Ingredients

Scale
  • For the Cupcakes:
    • 1 1/2 cups all-purpose flour
    • 1 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1/2 cup milk
    • 1 teaspoon vanilla extract
    • 1 1/2 teaspoons baking powder
    • Pinch of salt
    • (Optional) 1/4 cup cocoa powder for chocolate cupcakes
  • For the Frosting:
    • 1 cup unsalted butter, softened
    • 3 cups powdered sugar
    • 2-3 tablespoons milk
    • 1 teaspoon vanilla extract
    • Orange food coloring
    • Black decorating gel or candy eyes

Instructions

  1. Prepare the Cupcakes:
Preheat your oven to 350°F (175°C) and line a cupcake pan with 12 liners. In a large bowl, beat the butter and sugar until fluffy. Add the eggs and vanilla extract, mixing until well combined. In a separate bowl, whisk the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. For chocolate cupcakes, add cocoa powder to the dry ingredients.
  2. Bake:
Pour the batter evenly into the cupcake liners and bake for 18-20 minutes or until a toothpick inserted comes out clean. Let the cupcakes cool completely on a wire rack.
  3. Make the Frosting:
In a mixing bowl, beat the softened butter until smooth. Gradually add the powdered sugar, milk, and vanilla extract, beating until fluffy. Add orange food coloring and mix until the desired shade is reached.
  4. Frost the Cupcakes:
Use a piping bag fitted with a round tip or simply spread the frosting on each cupcake to create a smooth, round surface. Decorate with black gel to draw Jack-o-Lantern faces or place candy eyes for a spooky look.

Notes

  • Feel free to experiment with different cupcake flavors like pumpkin or spice for a festive twist!
  • You can use candy corn or small chocolate chips for the pumpkin "stems."
