  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta:
    In a large pot of salted boiling water, cook the fettuccine pasta according to the package instructions until al dente, about 10-12 minutes. Drain and set aside, reserving 1/4 cup of pasta water.
  2. Brown the Sausage:
    While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon as it cooks. Brown the sausage until fully cooked and browned, about 7-10 minutes.
  3. Sauté the Garlic:
    Add minced garlic to the skillet with the sausage and sauté for about 1 minute until fragrant.
  4. Make the Cream Sauce:
    Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and let cook for 3-5 minutes until the sauce thickens slightly.
  5. Combine Pasta and Sauce:
    Add the cooked fettuccine to the skillet with the sausage and cream sauce. Toss to coat, adding reserved pasta water as needed to reach your desired sauce consistency.
  6. Finish and Serve:
    Stir in Parmesan cheese until melted and the sauce becomes creamy. Season with salt and pepper to taste. Garnish with fresh parsley and serve immediately.
