Instructions
- Preheat oven to 400°F (200°C). Slice the baguette into half-inch pieces.
- Arrange the slices on a baking sheet, drizzle with 1 tablespoon olive oil, and toast in the oven for 8-10 minutes until golden brown.
- While the bread is toasting, wash and slice the zucchinis into thin rounds.
- In a skillet over medium heat, add 2 tablespoons olive oil. Sauté zucchini with salt and pepper until tender (about 5-7 minutes).
- Remove from heat, stir in lemon zest, and allow to cool slightly.
- Top each toasted baguette slice with sautéed zucchini and garnish with basil leaves. Drizzle with remaining olive oil if desired.
