  • 4 ounces pancetta, diced
  • 2 large eggs
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Boil salted water in a large pot. Cook tortellini according to package instructions until al dente, then drain.
  2. In a skillet over medium heat, cook diced pancetta until crispy (about 4-5 minutes). Remove from heat but retain drippings.
  3. Whisk eggs and Parmesan cheese in a bowl until smooth. Season with black pepper.
  4. Return the skillet to low heat, add cooked tortellini and minced garlic, tossing for about one minute until fragrant.
  5. Quickly pour egg mixture over hot pasta while tossing continuously to avoid scrambling the eggs.
