  • 2 cups shredded rotisserie chicken
  • 1 cup Mexican cheese blend
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 cup vegetable oil (for frying)
  • 1/2 cup sour cream (for serving)
  • 1/2 cup salsa (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix shredded chicken, spices, and half of the cheese until well combined.
  3. Take a tortilla, add about two tablespoons of filling near one edge, and roll tightly while tucking in the sides. Repeat until all fillings are used.
  4. Heat vegetable oil in a skillet over medium heat. Fry taquitos seam-side down until golden brown on all sides, approximately three minutes per side.
  5. Place fried taquitos on the baking sheet, sprinkle with remaining cheese, and bake for five minutes or until cheese is melted.
  6. Serve hot with sour cream and salsa.
