  • 4 medium sweet potatoes (about 2 lbs), peeled and sliced into 1/2-inch rounds
  • 1 lb lean ground beef or 1 cup cooked lentils
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (no-salt-added preferred)
  • 2 tbsp extra virgin olive oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 4 tbsp butter
  • 1/3 cup all-purpose flour
  • 2 cups milk
  • Salt, pepper, and nutmeg to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange sweet potato slices in a greased baking dish as the first layer.
  3. In a skillet over medium heat, sauté the onions in olive oil until translucent (about 5 minutes). Add garlic and ground beef or lentils; cook until browned.
  4. Stir in diced tomatoes, cinnamon, nutmeg, oregano, salt, and pepper. Simmer for about 10 minutes.
  5. For the béchamel sauce: Melt butter in a saucepan over low heat. Whisk in flour for about two minutes. Gradually whisk in milk until thickened (about five minutes). Season with salt, pepper, and nutmeg.
  6. Layer half of the meat mixture over sweet potatoes followed by another layer of sweet potato slices. Pour the béchamel sauce on top.
  7. Bake uncovered for about 45 minutes until golden brown.
