  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley or thyme, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick cooking spray.
  2. Wash and halve the baby potatoes, leaving some whole if desired.
  3. In a small saucepan over low heat, melt the unsalted butter with minced garlic until fragrant (about 2 minutes). Stir in olive oil.
