Ingredients

Scale
  • 2 cups rhubarb stalks, chopped
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 6 tbsp ice water

Instructions

  1. 1. Prepare the dough: In a mixing bowl, combine almond flour and all-purpose flour. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together.
  2. 2. Chill the dough: Wrap in plastic wrap and refrigerate for at least one hour.
  3. 3. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. 4. Prepare the filling: In another bowl, mix chopped rhubarb, sugar, cornstarch, and cinnamon until well blended.
  5. 5. Roll out the dough on a floured surface into a rough circle about 12 inches in diameter.
  6. 6. Assemble the galette: Transfer rolled dough to parchment paper, spoon filling into the center leaving two inches around edges. Fold edges over filling.
  7. 7. Bake for 40-45 minutes until golden brown.
