Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until fluffy. Mix in oil, red food coloring, and vanilla. Gradually add dry ingredients until combined.
- Pour batter into the pan and spread evenly. Bake for 15-20 minutes until a toothpick comes out clean.
- Turn the cake onto a powdered sugar-dusted kitchen towel and carefully roll it up from one end. Allow to cool completely.
- For the filling, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Unroll the cooled cake gently and spread the filling evenly over it. Roll back up without squeezing too hard.
