  • 1 cup buttermilk

  • 2 tbsp red food coloring (gel)

  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • For the Cream Cheese Frosting:
  • 4 oz cream cheese, softened
  • ¼ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, and baking powder.
  3. In another bowl, whisk together vegetable oil, sugar, buttermilk, eggs, food coloring, and vanilla until well combined.
  4. Gradually fold the dry ingredients into the wet ingredients until just mixed.
  5. Spoon batter into muffin cups until two-thirds full and bake for 15–20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by blending cream cheese and butter until smooth; gradually add powdered sugar and vanilla.
  7. Once cooled completely, frost the cake minis generously.
