Ingredients

Scale
  • 1 box pumpkin spice cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water (room temperature)
  • 2 cups whipped topping
  • 8 oz cream cheese (softened)
  • 1 cup pumpkin puree (canned or homemade)
  • 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large bowl, mix the cake mix, eggs, vegetable oil, and water until smooth. Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean.
  3. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  4. In another bowl, beat softened cream cheese with half of the whipped topping until smooth; add cinnamon and mix well. Gently fold in the remaining whipped topping until airy.
  5. Cut cooled cakes into bite-sized pieces. Layer cake pieces with whipped cream mixture in a large glass bowl until all ingredients are used, aiming for three layers.
  6. Cover and refrigerate for at least one hour before serving.
