  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup chocolate melts (dark or white)
  • sprinkles for decoration (optional)

Instructions

  1. 1. Preheat oven to 350°F (175°C). Grease or line a baking pan.
  2. 2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and a pinch of salt.
  3. 3. In another bowl, mix pumpkin puree with eggs until smooth. Fold into dry ingredients until just combined.
  4. 4. Pour batter into prepared pan and bake for 25-30 minutes until a toothpick comes out clean. Let cool completely.
  5. 5. Crumble cooled cake into a large mixing bowl and mix with frosting until dough-like consistency is reached.
  6. 6. Roll mixture into balls about 1 inch in diameter and place on parchment-lined tray.
  7. 7. Melt chocolate according to package instructions. Dip each cake ball into chocolate and let excess drip off before placing back on parchment.
  8. 8. If using sprinkles, add them before the chocolate sets. Chill in the fridge for about an hour until set.
