  • 4 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened (2 packages)
  • ¾ cup granulated sugar
  • ½ cup strong brewed coffee, cooled
  • ½ cup chopped pistachios (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Combine crushed graham crackers and melted butter in a bowl, then press firmly into the bottom of your cheesecake pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar until well combined.
  3. Pour in cooled brewed coffee and stir until fully blended.
