  • 2 cups pecan halves
  • 2 cups all-purpose flour (sifted)

  • 2 tsp baking powder
  • 1 tsp salt
  • 3 large eggs
  • 1 tbsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. Melt half a cup of butter in a saucepan over medium heat. Stir in one cup of brown sugar until smooth. Pour into the prepared pan and arrange two cups of pecan halves on top.
  3. In a mixing bowl, cream together one cup of granulated sugar and half a cup of softened butter until light and fluffy. Add three eggs one at a time, mixing well after each addition. Stir in one tablespoon of vanilla extract.
  4. In another bowl, whisk together two cups of flour, two teaspoons of baking powder, and one teaspoon of salt. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Pour the batter over the pecans in the pan and bake for 35-40 minutes or until a toothpick comes out clean.
  6. Cool for ten minutes before inverting onto a serving plate.
