- 1/4 cup granulated sugar
- 1/2 cup sour cream
- 4 large eggs, room temperature
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
- For the pecan topping:
- 6 tablespoons unsalted butter
- 2/3 cup brown sugar
- 1/2 cup dark corn syrup
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 1/2 cups chopped pecans
- Butter or cooking spray for the pan
- Hot water for the water bath
Instructions
- Preheat the oven to 325°F. Grease a 9x13-inch pan, line the bottom with parchment paper, and grease the parchment.
- Process the graham cracker crumbs, 1/2 cup pecans, and 1/4 cup brown sugar until fine. Mix in 8 tablespoons melted butter, then press firmly into the pan.
- Bake the crust for 10 minutes, then let it cool.
- Beat the cream cheese for 3 minutes. Add 1 cup brown sugar and 1/4 cup granulated sugar and beat for 2 minutes. Mix in the sour cream.
- Add the eggs one at a time, mixing only until incorporated. Stir in 1 tablespoon vanilla and 1/2 teaspoon salt, then pour the filling over the cooled crust.
- Place the pan inside a larger roasting pan and add hot water to create a water bath. Bake for 55 to 65 minutes, until the edges are set and the center still jiggles gently.
- Turn off the oven and leave the cheesecake inside for 1 hour. Refrigerate for at least 6 hours.
- For the topping, boil 6 tablespoons butter, 2/3 cup brown sugar, and dark corn syrup over medium heat. Simmer for 5 minutes.
- Add the heavy cream, 1 teaspoon vanilla, and 1/2 teaspoon salt. Cook for 1 to 2 minutes, then stir in 2 1/2 cups pecans.
- Cool the topping for 5 minutes, spread it over the chilled cheesecake, and refrigerate for at least 3 more hours before slicing into 24 bars.
