Description

  • 2 cups graham cracker crumbs
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar

  • 907 grams (32 ounces) cream cheese, softened
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup sour cream
  • 4 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • For the pecan topping:
  • 6 tablespoons unsalted butter
  • 2/3 cup brown sugar
  • 1/2 cup dark corn syrup
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups chopped pecans
  • Butter or cooking spray for the pan
  • Hot water for the water bath

Instructions

  1. Preheat the oven to 325°F. Grease a 9x13-inch pan, line the bottom with parchment paper, and grease the parchment.
  2. Process the graham cracker crumbs, 1/2 cup pecans, and 1/4 cup brown sugar until fine. Mix in 8 tablespoons melted butter, then press firmly into the pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. Beat the cream cheese for 3 minutes. Add 1 cup brown sugar and 1/4 cup granulated sugar and beat for 2 minutes. Mix in the sour cream.
  5. Add the eggs one at a time, mixing only until incorporated. Stir in 1 tablespoon vanilla and 1/2 teaspoon salt, then pour the filling over the cooled crust.
  6. Place the pan inside a larger roasting pan and add hot water to create a water bath. Bake for 55 to 65 minutes, until the edges are set and the center still jiggles gently.
  7. Turn off the oven and leave the cheesecake inside for 1 hour. Refrigerate for at least 6 hours.
  8. For the topping, boil 6 tablespoons butter, 2/3 cup brown sugar, and dark corn syrup over medium heat. Simmer for 5 minutes.
  9. Add the heavy cream, 1 teaspoon vanilla, and 1/2 teaspoon salt. Cook for 1 to 2 minutes, then stir in 2 1/2 cups pecans.
  10. Cool the topping for 5 minutes, spread it over the chilled cheesecake, and refrigerate for at least 3 more hours before slicing into 24 bars.
