  • 1 cup boneless chicken breast or tofu, sliced
  • 4 garlic cloves, minced
  • 2 cups Kai Lan (Chinese broccoli) or regular broccoli, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

Instructions

  1. Soak the wide rice noodles in hot water until pliable but firm (about 30 minutes for dried noodles).
  2. In a bowl, mix together low-sodium soy sauce, dark soy sauce, and brown sugar; set aside.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat. Cook sliced chicken or tofu until golden brown; remove from pan.
  4. In the same pan, sauté minced garlic until fragrant (about 1 minute), then add Kai Lan or other veggies. Stir-fry until vibrant and tender-crisp.
  5. Return the cooked protein to the pan along with softened rice noodles. Pour in the prepared sauce and stir-fry until well coated (about 2 minutes).
