  • 1 cup graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 12 Mini Rolos

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press about 1 tablespoon into each cupcake liner in a muffin tin.
  2. In another bowl, beat softened cream cheese until smooth. Add sugar and vanilla; blend well. Gradually pour in heavy cream while mixing until creamy.
  3. Spoon the filling over the crusts until three-quarters full. Gently press one Mini Rolo into each cheesecake.
  4. Bake for 15-20 minutes until set but slightly jiggly in the center. Cool completely before chilling in the fridge.
  5. Serve cold, drizzled with chocolate syrup or caramel sauce.
