  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, cold
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 3-4 tbsp ice water
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup mixed fresh fruits (strawberries, blueberries, kiwi)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until dough forms.
  2. Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles and press into greased muffin tins.
  3. Bake for 15 minutes or until golden brown. Allow to cool completely on wire racks.
  4. Whip heavy cream until soft peaks form; mix in vanilla extract.
  5. Fill cooled tart shells with whipped cream mixture and top with fresh fruits.
  6. Refrigerate for at least one hour before serving.
