  • 8 oz cream cheese (full-fat)
  • 1 cup sour cream (full-fat)
  • 3/4 cup granulated sugar (divided)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 4 tbsp unsalted butter (melted)
  • 1 cup graham cracker crumbs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tbsp sugar until combined. Press into the bottom of muffin cups or ramekins.
  3. In another bowl, beat cream cheese until smooth. Gradually add sour cream, remaining sugar, vanilla extract, and eggs until creamy.
  4. Spoon the mixture over crusts in muffin cups, filling about three-quarters full.
  5. Bake for 20-25 minutes or until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before chilling in the fridge for at least four hours.
  7. Before serving, sprinkle sugar on top and use a kitchen torch to caramelize until golden brown.
