  • 2 large eggs

  • 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press about 1 tablespoon into each liner to form the crust.
  3. In another bowl, beat together cream cheese, 3/4 cup sugar, eggs, vanilla extract, and cinnamon until smooth.
  4. Spoon cream cheese mixture over each crust until three-quarters full.
  5. Bake for 20-25 minutes or until set but slightly jiggly in the center.
  6. Cool completely before refrigerating for at least two hours.
