Ingredients

Scale
  • 4 medium Russet potatoes, peeled and diced (about 800g)
  • 1 lb lean ground beef (450g)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth (720ml)
  • 1 cup heavy cream (240ml)
  • 2 cups shredded sharp cheddar cheese (200g)
  • ½ cup bacon bits for garnish (75g)
  • 2 green onions, sliced for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef until no longer pink. Drain excess fat if needed.
  2. Add the chopped onion and minced garlic to the pot; sauté until fragrant, about 3 minutes.
  3. Stir in the diced potatoes and beef broth; mix well.
  4. Bring to a boil, then reduce heat and cover. Let simmer for about 20 minutes until potatoes are tender.
  5. Slowly stir in heavy cream while mashing some potatoes against the pot for a creamy texture.
  6. Add shredded cheddar cheese, stirring constantly until melted.
  7. Serve hot, topped with bacon bits and sliced green onions.

Keywords: For a lighter version, substitute ground turkey for beef or add spices like paprika for extra flavor. Using Yukon Gold potatoes offers a creamier texture.
