  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup (for the glaze)

Instructions

  2. In a medium bowl, whisk together the gluten-free flour, baking powder, and cinnamon.
  3. In a large bowl, mix the pumpkin puree, eggs, brown sugar, and maple syrup until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined—do not over-mix.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the maple glaze by whisking together powdered sugar and maple syrup until smooth.
  7. Once cooled completely, drizzle the glaze over the cake before slicing.
