  • 1 cup dried chickpeas (soaked overnight) or 1 can (15 oz) chickpeas, drained
  • 1 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp salt
  • ¼ tsp black pepper
  • Oil for frying (about ½ cup)
  • 4 pocket-style pita breads
  • ½ cup tahini
  • Juice of 1 lemon
  • Water, as needed for consistency

Instructions

  1. If using dried chickpeas, soak them overnight; drain and rinse before use.
  2. In a food processor, blend chickpeas, parsley, garlic, cumin, salt, and pepper until coarse.
  3. Form the mixture into small balls or patties (about 1 inch).
  4. Heat oil in a skillet over medium heat and fry falafel until golden brown (about 5 minutes). Drain on paper towels.
  5. For the tahini sauce, mix tahini with lemon juice and enough water to reach desired consistency.
  6. Slice open each pita and fill with falafel balls. Drizzle with tahini sauce and add veggies as desired.
