  • 1 cup carrots, diced
  • 1 cup celery, diced

  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water until clear.
  2. In a large pot over medium heat, sauté chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in diced carrots and celery; cook for about 3 minutes until slightly softened.
  4. Add rinsed wild rice and vegetable broth to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for about 45 minutes until the rice is tender.
  5. Fluff the pilaf with a fork, mix in fresh thyme leaves, and season with salt and pepper to taste.
