  • 1 lb flank steak, sliced against the grain
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

Instructions

  1. Slice flank steak into thin strips against the grain and chop bell peppers and onion into bite-sized pieces.
  2. In a bowl, mix soy sauce, cornstarch, and brown sugar; add beef strips to marinate for 15-20 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Sauté onions until translucent (about 5 minutes), then add bell peppers and cook for an additional 3 minutes.
  4. Push veggies aside in the skillet and add marinated beef. Sear for about 2 minutes before mixing all ingredients together. Cook until beef is browned (approximately 5 more minutes).
  5. Pour any remaining marinade into the pan and simmer for another minute until the sauce thickens slightly.
  6. Serve hot over rice or noodles.
