  • ⅓ cup vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat sugar and eggs until light and fluffy. Add vegetable oil and pumpkin puree; mix well.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-22 minutes or until a toothpick comes out clean.
  6. Allow to cool before frosting with cream cheese frosting if desired.
