Ingredients

Scale
  • 1 can (15 oz) low-sodium chickpeas
  • 2 tbsp extra-virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 head of romaine lettuce (about 8 leaves)
  • 2 tbsp low-sodium soy sauce
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain, rinse, and pat dry the chickpeas. Toss them in a mixing bowl with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the seasoned chickpeas on the prepared baking sheet and roast for 25-30 minutes or until golden brown and crunchy, stirring halfway through.
  4. While the chickpeas roast, whisk together soy sauce and lime juice in a small bowl.
  5. Once roasted, assemble your wraps by placing a spoonful of chickpeas on each romaine leaf, drizzling with sauce, and adding any additional toppings you desire.
  6. Serve immediately for the best texture.
