Instructions
- Preheat your oven to 350°F (175°C) and line cupcake tins with paper liners.
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, beat the eggs, milk, vegetable oil, and vanilla extract until bubbly.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the fresh raspberries.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool in the pan for five minutes before transferring to wire racks.
- Make the chocolate buttercream: beat the softened butter for 3 to 4 minutes until pale. Sift the powdered sugar and cocoa powder together and add a cup at a time on low speed, then the milk and vanilla. Beat 2 minutes more, adding a splash more milk if it is too stiff. Frost only once the bake has cooled completely.
