  • 4 cups fresh baby spinach
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • 1 cup grated fresh Parmesan cheese
  • 2 cups marinara sauce
  • 1 large egg
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Layer zucchini slices on paper towels, sprinkle with salt, and let sit while preparing the filling.
  3. In a bowl, mix ricotta cheese, egg, half of the Parmesan cheese, Italian seasoning, salt, and pepper until well combined.
  4. Spread a thin layer of marinara sauce at the bottom of the baking dish. Layer zucchini slices, half of the spinach, half of the ricotta mixture, and repeat until all ingredients are used.
  5. Finish with marinara sauce on top; sprinkle with mozzarella cheese and remaining Parmesan.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 15-20 minutes until golden brown.
