  • 4 large Russet potatoes, thinly sliced
  • 2 cups heavy cream
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Layer potato slices in the dish, seasoning with salt and pepper between layers.
  3. In a bowl, mix heavy cream, minced garlic, half the herbs, salt, and pepper. Pour over the potatoes.
  4. Continue layering with cheddar cheese until all ingredients are used.

  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
