  • 3 cups tart apples (like Granny Smith), peeled and sliced
  • 1 tsp cinnamon
  • ½ cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and granulated sugar; press into the bottom of a springform pan to form the crust.
  2. In a bowl, beat softened cream cheese until smooth. Add eggs one at a time, blending well after each addition. Mix in sour cream and vanilla extract until combined.
  3. Toss sliced apples with brown sugar and cinnamon in a separate bowl.
  4. Layer half of the cheesecake filling over the crust followed by half of the apple mixture. Repeat with remaining filling and apples.
  5. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours or overnight.
