Description

This Easy Instant Pot Chicken & Sausage Jambalaya is a hearty, flavorful dish packed with tender chicken, smoky sausage, and aromatic spices, all cooked to perfection in a fraction of the time. Perfect for busy weeknights or family gatherings!


Ingredients

  • 1 lb (450g) chicken thighs, boneless, skinless, cut into bite-sized pieces
  • 1 lb (450g) smoked sausage, sliced (Andouille or kielbasa works well)
  • 1 medium onion, diced
  • 1 bell pepper, diced (red or green)
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup (200g) long-grain rice
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 3 cups (720ml) chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Chopped parsley, for garnish

Instructions

  • Sauté the Ingredients:
    • Set your Instant Pot to "Sauté" mode. Add olive oil and heat for a minute.
    • Add the sliced sausage and cook until browned, about 3-4 minutes. Remove and set aside.
    • In the same pot, add onion, bell pepper, celery, and garlic. Sauté until softened, about 3-5 minutes.
  • Add the Chicken:
    • Stir in the chicken pieces and cook for 2-3 minutes until slightly browned.
  • Mix in the Rice and Seasoning:
    • Add the rice, diced tomatoes (with juices), chicken broth, Cajun seasoning, thyme, salt, and pepper. Stir well to combine.
  • Pressure Cook:
    • Close the lid and set the Instant Pot to "Manual" or "Pressure Cook" for 8 minutes. Make sure the vent is set to sealing.
  • Natural Release:
    • Once cooking is complete, allow for a natural pressure release for 10 minutes, then switch to a quick release for any remaining pressure.
  • Serve:
    • Open the lid and stir the jambalaya gently to fluff the rice. Mix in the browned sausage and garnish with chopped parsley before serving.

Notes

  • Feel free to adjust the spice level by adding more or less Cajun seasoning.
  • For a veggie boost, add frozen peas or corn just before serving.
  • This dish is perfect for leftovers; the flavors deepen as it sits!
