These Instant Pot Beef Short Ribs are tender, flavorful, and melt-in-your-mouth delicious. Braised in a savory sauce with garlic, onion, and a touch of soy sauce, this dish is a comfort food classic made quick and easy in the Instant Pot.


Ingredients

4-6 bone-in beef short ribs (about 3 lbs)

Salt and pepper, to taste

2 tablespoons vegetable oil

1 large onion, chopped

3-4 cloves garlic, minced

1 cup low-sodium beef broth

1 cup tomato sauce

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

2 tablespoons apple cider vinegar

1 teaspoon dried thyme

1 bay leaf

1 teaspoon ground black pepper


Instructions

  1. Season and Sear:
    Season beef short ribs generously with salt and pepper. Set your Instant Pot to Sauté, add oil, and brown the ribs on all sides for 3-4 minutes. Remove the ribs and set them aside.
  2. Sauté Aromatics:
    In the same pot, sauté the chopped onion for 3-4 minutes until soft. Add minced garlic and cook for another 30 seconds, until fragrant.
  3. Deglaze the Pot:
    Pour in beef broth to deglaze, scraping up any browned bits from the bottom of the pot.
  4. Add Liquids and Ribs:
    Add tomato sauce, soy sauce, Worcestershire sauce, apple cider vinegar, thyme, bay leaf, and black pepper. Stir to combine. Return the beef short ribs to the pot, ensuring they are submerged in the liquid.
  5. Pressure Cook:
    Close the Instant Pot lid, set the valve to "Sealing," and cook on High Pressure for 45 minutes. After the cooking time, allow a natural release for 15 minutes, then release any remaining pressure manually.
  6. Serve:
    Remove the ribs and set them aside. You can thicken the sauce by using the Sauté function and reducing it for a few minutes if desired. Serve the ribs with mashed potatoes, rice, or roasted vegetables, and spoon the sauce over the top.

Notes

  • Beef Short Ribs: Bone-in ribs provide the best flavor, but boneless ribs can also be used. If using boneless, reduce cooking time slightly by 5 minutes.
  • Thickening the Sauce: If the sauce is too thin, set the Instant Pot to Sauté and simmer for a few minutes until it thickens. You can also add a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) to thicken the sauce.
  • Flavor Variations: Feel free to adjust the seasoning with additional herbs like rosemary or swap in a splash of red wine or balsamic vinegar for a different flavor.
