  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1/2 cup Baileys Irish Cream
  • 1 tsp vanilla extract

For the chocolate buttercream

  • 1 cup (226 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1/2 cup (43 g) unsweetened cocoa powder
  • 2 tbsp whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, mix the eggs, milk, vegetable oil, Baileys Irish Cream, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry mixture, stirring gently until just combined without overmixing.
  5. Spoon the batter into the cupcake liners until filled two-thirds full. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Allow the cupcakes to cool completely before frosting with your favorite icing or whipped cream.
  7. Make the chocolate buttercream: beat the softened butter for 3 to 4 minutes until pale. Sift the powdered sugar and cocoa powder together and add a cup at a time on low speed, then the milk and vanilla. Beat 2 minutes more, adding a splash more milk if it is too stiff. Frost only once the bake has cooled completely.
