  • 4 medium poblano peppers
  • 1 medium onion, diced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C). Roast whole poblano peppers on a baking sheet until charred (20-25 minutes).
  2. Place the roasted peppers in a bowl covered with plastic wrap for 10 minutes to steam. Peel off the charred skin and slice into strips.
  3. In a skillet over medium heat, melt 2 tbsp of butter or olive oil. Sauté the diced onion until translucent (about 5 minutes).
  4. Add minced garlic and sauté for another minute until fragrant.
  5. Stir in sliced poblanos, heavy cream, salt, and pepper. Let simmer on low heat for about 5 minutes.
  6. Finish by stirring in chopped cilantro before serving.
